I installed menu editor and can access it by hitting CTRL-SHIFT-S. But isn't it supposed to show up in my Tools menu? It's not there.

You can access it just like you access the options for every other extension. Open the extensions window, and highlight the extension you want and press the options button (or double click the extension you want)
From the menu editor options you can turn on a tools menu item to open the menu editor options. Called "Customize menus" It is off by default.

But what if you want to hide the Extensions Window from Tools? How do you access Menu Editor then? I really want to disable the Extensions from showing, but am afraid I will lock myself out of Menu Editor! Please help! Thanks.

your question is already answered in the previous posts use CTRL-SHIFT-S or Unhide the "customize menus" menuitem in the tools menu (it's hidden by default)
